Ginger-Applesauce Cake

  • 3/4 cup butter, softened, divided
  • 1 pkg. (2-layer size) spice cake mix
  • 3 eggs
  • 1-1/3 cups applesauce
  • 2/3 cup finely chopped crystallized ginger, divided
  • 1 pkg. (250 g) Philadelphia Brick Cream Cheese, softened
  • 1 tsp. vanilla
  • 1 tsp. ground ginger
  • 2 cups icing sugar

    Heat oven to 350 degrees F.

    Beat 1/2 cup butter, cake mix, eggs and applesauce with mixer 2 min.

    or until well blended.

    Stir in 1/2 cup chopped ginger.

    Pour into 13x9-inch baking dish sprayed with cooking spray.

    Bake 45 to 50 min.

    or until toothpick inserted in centre comes out clean.

    Cool completely.

    Beat cream cheese and remaining butter in large bowl with mixer until well blended.

    Add vanilla and ground ginger; mix well.
