Ginger candy

Directions

   Peeled the ginger root with a spoon .

   Cut it in pieces (any shape you want and as big or small as you want.

   In a pan put the 3 cups of water to boil .

   Once the water is boiling pouring the ginger.

   Let the ginger boil for 10-12 minutes.

   Then add one cup of sugar , and let the ginger with the sugar boil for 15 min then add the second cup of sugar and let it boil for 20 min (if necessary add more sugar to your tastes.)

   keep boiling the ginger till the water has reduced n and you have a serum like consistency.

   At this point you have to sturd constantly till it get the caramel color.

   Turn off the heat drain and transfer the candies in to a baking sheet to cool off or customer on in a little bit of granulated sugar for a sugar cover ginger candies...let them cool and enjoy.
