  • 3 cups chicken, cooked and cut in large pieces
  • 1 (8 ounce) can pineapple chunks in heavy syrup
  • 14 lb margarine
  • 1 cup chicken broth
  • 2 tablespoons brown sugar
  • 1 large garlic clove, minced
  • 14 cup vinegar
  • 2 teaspoons soy sauce
  • 14 cup water
  • 1 tablespoon ground ginger
  • 3 tablespoons cornstarch
  • 1 medium green pepper, chopped
  • 14 cup water
  • rice

    Drain pineapple chunks, reserving syrup.

    In skillet, brown chicken in margarine.

    Add reserved syrup, broth, vinegar, sugar, soy sauce and garlic.

    Cover; cook over low heat 40 minute.

    Add green pepper and pineapple chunks;.

    cook 5 minute or until done.

    Stir occasionally.

    Combine cornstarch, ginger and water; gradually stir into sauce.

    Cook, stirring until thickened.
