- 3 cloves Garlic, Peeled
- 1 piece Fresh Ginger - About One Inch Size
- 1/2 cups Soy Sauce
- 1/2 cups Mirin
- 1/4 cups Rice Vinegar
- 1 Tablespoon Sesame Oil
- 4 whole Bone-in, Skin-on Chicken Breasts
- 2 whole Scallions, Thinly Sliced, For Serving, Optional
- Cooked White Rice, For Serving (optional)
Directions

1Grate the garlic and ginger directly into a large bowl.

2Add the soy sauce, mirin, vinegar, and sesame oil.

3Whisk together, then add the chicken into the sauce and make sure its well coated.

4Put the bowl into the refrigerator and let the chicken marinate for as long as you have; 2-4 hours is ideal.

5When ready to cook, transfer the chicken, skin side up, and all the juices from the marinade into a baking dish.

6Preheat the oven to 400 F. Put dish into the preheated oven and bake uncovered for 30-40 minutes or until cooked through.

7Serve with scallions, extra juices from the pan, and rice, or as desired.

8Note: Check the chicken as its baking after 20 minutes.

9If the chicken skin is browned but the chicken isnt yet cooked through, cover loosely with tin foil until chicken is fully cooked.
