Ginger Chicken Kabobs

- 1 lb. boneless, skinless chicken breast, cut into 1-1/2-inch cubes
- 1/4 cup fresh lemon juice
- 3 tbsp. olive oil
- 1 piece fresh ginger, peeled and grated
- 1 clove garlic, minced
- 1/2 tsp. black pepper
- 1/4 tsp. salt
- Wooden skewers, soaked in water
Directions

1Mix the salt, pepper, garlic, ginger, olive oil and lemon juice in a medium bowl.

2Put the cubed chicken in the lemon mixture and toss to blend.

3Cover with plastic wrap and chill for one hour to let the flavors blend.

4Set oven to broil.

5Thread the chicken onto wooden skewers.

6Toss out the remaining marinade.

7Cook the kabobs for about 11-13 minutes on each side or until the chicken is lightly brown and fully cooked.

8Serve hot or warm.
