Ginger Chicken Kabobs

  • 1 lb. boneless, skinless chicken breast, cut into 1-1/2-inch cubes
  • 1/4 cup fresh lemon juice
  • 3 tbsp. olive oil
  • 1 piece fresh ginger, peeled and grated
  • 1 clove garlic, minced
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt
  • Wooden skewers, soaked in water

Directions

    Mix the salt, pepper, garlic, ginger, olive oil and lemon juice in a medium bowl.

    Put the cubed chicken in the lemon mixture and toss to blend.

    Cover with plastic wrap and chill for one hour to let the flavors blend.

    Set oven to broil.

    Thread the chicken onto wooden skewers.

    Toss out the remaining marinade.

    Cook the kabobs for about 11-13 minutes on each side or until the chicken is lightly brown and fully cooked.
