- 1 cup long grain white rice
- 12 cup scallion, chopped
- 12 cup jarred roasted red pepper, chopped
- 1 teaspoon fresh ginger, finely chopped
- 12 teaspoon sugar
Directions

1In a medium saucepan, bring 2 cups of water to a boil.

2Add the rice and stir once.

3Reduce heat, cover and simmer 15-20 minutes or until the water is absorbed and the rice is tender.

4Remove from the heat and let stand 3 minutes.

5Add scallions, roasted red pepper, ginger and sugar to the rice.

6Stir with a fork to combine and fluff.
