  • 2 cups all-purpose flour
  • 2 12 teaspoons ground ginger
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 tsp.ground clove
  • 34 teaspoon salt
  • 34 cup crystallized ginger, finely chopped
  • 1 cup brown sugar, packed
  • 12 cup vegetable shortening, room temperature
  • 14 cup unsalted butter, room temperature
  • 1 large egg
  • 14 cup molasses, light
  • extra sugar for rolling cookie

Directions

    Combine first 6 ingredients in a bowl and whisk to blend.

    Mix in crystallized ginger.

    Using an electric mixer, beat brown sugar, shortening and butter until blended.

    Cover and refrigerate one hour.

    Preheat oven to 350F Lightly butter 2 baking sheets.

    Put extra sugar in a thick layer on small plate.

    Using wet hands, form dough into medium-sized balls (1 1/4 -inch balls, but really who measures!

    Roll in sugar to coat completely.

    Bake cookies untl cracked on top but still soft to touch, about 10-12 minutes.
