- 1 c. sugar
- 1 egg
- 1/2 tsp. salt
- 1/4 c. dark molasses
- 2 c. flour
- 2 tsp. soda
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1/4 c. sugar
- 1 tsp. vanilla (optional)
Directions

1Preheat the oven to 350°.

2Combine oil and 1 cup sugar in a bowl.

3Add egg and beat.

4Stir in molasses and vanilla, then dry ingredients. Roll into about 1-inch balls and dip into remaining 1/4 cup sugar. Bake about 10 minutes or until done but not too dark.
