  • 10 lb. cleaned chitterlings
  • 1 large chopped onion
  • seasoning salt to taste
  • black pepper
  • 3 cloves chopped garlic (optional)
  • dry red or cayenne pepper to taste

Directions

    Cook chitterlings slowly until almost tender.

    Pour off most of liquid.
  3. 3
    Add onion, garlic and salt and pepper to taste. Continue to cook until tender or can be cut with a fork.
