Ingredients
- 1 (23 oz.) jar unsweetened applesauce
- 1 1/2 to 2 Tbsp. freshly grated ginger (omit fiber)
- 1 1/4 c. sugar
- 1/8 tsp. salt
- 2 Tbsp. lemon juice
- 3 packets unflavored gelatin
- 4 to 8 drops yellow or red coloring
- 1/3 c. sugar for coating
Directions

1Spray nonstick 8-inch square pan.

2Reserve 1/2 cup applesauce. Combine remaining sauce, ginger, sugar and salt in pot.

3Bring to boil and cook 25 minutes. Stir in lemon juice, gelatin and reserved applesauce.

4Add coloring.

5Cook 10 minutes.

6Pour into prepared pan.

7Smooth top and cool completely.

8Cut into 64 squares.

9Coat with 1/3 cup sugar.

10Layer jellies between plastic wrap in airtight container and store in refrigerator.
