- 12 cup coarsely chopped of fresh mint
- 1 inch piece fresh ginger, peeled and chopped (about 1 tablespoon, or use 1 teaspoon ground ginger)
- 3 medium garlic cloves, crushed
- 1 cup plain fat-free yogurt
- 1 teaspoon ground coriander
- 2 (5 ounce) boneless skinless chicken breast halves
- 1 medium tomatoes, sliced
Directions

1Mix mint, ginger, and garlic, together in a food.

3Add yogurt and coriander.

4Place chicken in a bowl and pour mixture on top.

5Marinate 15 minutes, turning once during this time or longer if you have time.

6Preheat broiler.

7Line a baking sheet with foil and place chicken with some marinade on sheet.

8Discard remaining marinade.

9Broil chicken about 5 inches from the heat source for 5 minutes per side.

10Serve with sliced tomatoes along the side.
