- 2 whole boneless, skinless chicken breasts, cut into strips
- 2 Tbsp. margarine
- 1 can peach slices
- 1 Tbsp. cornstarch
- 1/2 tsp. ground ginger
Directions

1Cook chicken in margarine in skillet.

2Remove from skillet and keep warm.

3Drain syrup from peaches, reserving syrup.

4Add water to syrup to make 1 cup.

5Stir in the cornstarch and ground ginger. Add mixture to skillet and stir into chicken drippings.

6Cook until thick and bubbly.

7Add peaches and heat through.

8Season with salt and pepper to taste.

9Serve chicken strips over cooked rice and spoon mixture over chicken.
