- 12 to 14 chicken pieces
- 1 Tbsp. each salt and ground ginger
- 1/4 c. vegetable oil
- 1 c. chopped onion
- 2 (16 oz.) cans whole tomatoes, chopped
- 1 (6 oz.) can tomato paste
- pineapple chunks (if desired)
- 1 (4 1/2 oz.) can chopped mild green chilies
- 1 to 2 Tbsp. finely chopped ginger root
- 1/2 tsp. red pepper flakes
- 1 clove garlic, pressed
- 2 c. hot water
- 3/4 c. creamy peanut butter
Directions

1Remove skins from chicken.

2Sprinkle chicken with salt and ground ginger. Heat vegetable oil in a large skillet over medium-high heat. Cook chicken in hot oil, turning occasionally, until chicken is browned on all sides, about 10 minutes.

3Transfer chicken to a plate, reserving pan drippings in skillet.
