  • 12 to 14 chicken pieces
  • 1 Tbsp. each salt and ground ginger
  • 1/4 c. vegetable oil
  • 1 c. chopped onion
  • 2 (16 oz.) cans whole tomatoes, chopped
  • 1 (6 oz.) can tomato paste
  • pineapple chunks (if desired)
  • 1 (4 1/2 oz.) can chopped mild green chilies
  • 1 to 2 Tbsp. finely chopped ginger root
  • 1/2 tsp. red pepper flakes
  • 1 clove garlic, pressed
  • 2 c. hot water
  • 3/4 c. creamy peanut butter

    Remove skins from chicken.

    Sprinkle chicken with salt and ground ginger. Heat vegetable oil in a large skillet over medium-high heat. Cook chicken in hot oil, turning occasionally, until chicken is browned on all sides, about 10 minutes.

    Transfer chicken to a plate, reserving pan drippings in skillet.
