- 10 lb. pears
- 8 lb. sugar
- 4 oz. crystallized ginger
- 6 lemons
Directions

1Pare fruit; cut in thin slices after removing core.

2Mix pears and sugar.

3Place over low heat in large kettle.

4Stir until sugar is melted and syrup formed.

5Simmer until fruit is clear, stirring occasionally.

6Add grated rind of 2 lemons and juice of all 6. Add ginger, cut in small pieces; simmer until thick.

7Put in sterilized jelly glasses; cover with paraffin, or seal in sterilized pint jars while hot.

8Yields approximately 18 glasses.
