Ginger Salmon Cakes

  • 3 tbsp olive oil
  • 1 None onion, chopped
  • 1/2 None lemon, zested
  • 1 lb salmon, skin-removed and diced
  • 1 inch fresh ginger, peeled and chopped
  • None None canola oil, for deep-frying
  • 2 1/4 lb baking potatoes, peeled and cut into French fries
  • 2/3 lb frozen peas
  • None None fresh dill, to garnish

Directions

    Heat 1 tsp olive oil in a pan and sweat onion until softened. Remove from heat. Combine with lemon zest, fish, ginger and 2 tsp olive oil. Season with salt then form into 8 patties. Heat remaining olive oil in a pan and fry patties for 4-5 mins over medium heat, turning once.

    Heat oil for deep-frying to 300°F. Cook French fries, in batches, for 4 mins. Remove with a slotted spoon and drain on paper towels. Meanwhile, simmer peas in salted water for about 3 mins. Drain well. Serve fish cakes with French fries and peas. Garnish with dill.
