Ginger Shrimp Toast

  • 1 loaf thin sliced white bread
  • 6 Tbsp. unsalted butter (at room temperature)
  • 3/4 lb. fresh medium shrimp, cooked, peeled and minced
  • 1/4 tsp. salt
  • 2 Tbsp. minced fresh parsley
  • 1 clove minced garlic
  • 1 tsp. fresh ground ginger

    Preheat broiler.

    Using a 1 1/2 to 2 -inch cookie cutter, cut bread slices into rounds.

    Toast on one side only.

    Cream butter and salt.

    Stir in minced shrimp, garlic, parsley and ginger. Blend well.

    Spread mixture on untoasted side of bread rounds. Place on cookie sheet and broil until lightly browned.

    Serve immediately.

    Yields 50 to 60 rounds.
