  • 1/4 cup margarine, softened
  • 1/2 cup brown sugar
  • 1 egg, lightly beaten
  • 1/2 cup molasses
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup strong brewed coffee
  • Vegetable cooking spray

Directions

    Beat margarine in a large bowl at medium speed of an electric mixer until creamy; gradually add brown sugar, beating well. Add egg, and beat well. Stir in molasses.

    Combine flour and next 6 ingredients; add flour mixture to creamed mixture alternately with coffee, beginning and ending with flour mixture. Mix after each addition.

    Pour batter into a 9- x 5- x 3-inch loafpan coated with cooking spray. Bake at 350° for 55 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 5 minutes; remove from pan, and let cool completely on a wire rack.
