Ginger Syrup Sponge

  • 12 ounces Self-raising flour
  • 10 ounces Granulated sugar
  • 2 teaspoons Ground ginger
  • 4 ounces Butter or margarine
  • 3 tablespoons Golden syrup
  • 2 pieces Eggs
  • 10 ounces Hot water
  • 2 pieces Stem ginger chopped

Directions

    Grease and line a deep 8 inch cake tin

    Mix all dry ingredients together. Rub in fat, until it resembles fine breadcrumbs.

    Mix syrup, egg and hot water together and stir this liquid into the flour until a smooth, soft batter is formed. Pour into the prepared tin.
