- 2 eggs
- 2 c. sugar
- 1 c. molasses
- 1 c. oil
- 1 tsp. salt
- 3 heaping Tbsp. ginger
- 1 c. strong coffee
- 2 heaping tsp. soda
- 8 c. flour (makes a stiff dough)
Directions

1Beat eggs; add oil and sugar and mix well.

2Add syrup and salt.

3Mix 1 heaping teaspoon soda to 1/2 cup hot coffee.

4Add remaining soda to remaining coffee; add to liquids, add ginger, then flour.

5May be rolled and cut, dropped and lightly patted down; or pinched off and patted out.

6Bake at 350° until done.

7Do not overcook.

8Approximately 3 dozen large cookies.
