  • 2 1/2 c. all-purpose flour or cake flour
  • 1/3 c. sugar
  • 1 c. dark molasses
  • 3/4 c. hot water
  • 1/2 c. shortening
  • 1 egg
  • 1 tsp. soda
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 3/4 tsp. salt
  • sweetened whipped cream or applesauce

    Heat oven to 325°.

    Grease and flour a baking pan 9 x 9 x 2-inches.

    Mix all ingredients except whipped cream or applesauce in a large mixer bowl.

    Blend 1/2 minute on low speed, scraping the bowl constantly.

    Beat 3 minutes on medium speed scraping occasionally.

    Pour into the pan.

    Bake 50 minutes.
