- 1 2/3 c. all-purpose flour (white or whole wheat pastry)
- 1 1/4 tsp. baking soda
- 1 1/2 tsp. ground ginger
- 3/4 tsp. ground cinnamon
- 3/4 tsp. salt
- 1 egg, lightly beaten
- 1/2 c. granulated sugar
- 1/2 c. molasses
- 1/2 c. boiling water
- 1/2 c. vegetable oil

1Preheat oven to 350°.

2Grease and flour a 9-inch square pan. Sift dry ingredients together into a mixing bowl.

3Add egg, sugar, and molasses; mix well.

4Pour boiling water and oil over mixture. Stir thoroughly until smooth.

5Pour batter into the prepared pan. Bake for 35 to 40 minutes.

6While the gingerbread is still hot, pour lemon glaze (3 tablespoons lemon juice plus enough confectioners sugar to make a pourable glaze) over top.
