  • 1/2 cup butter, chopped, plus extra for serving
  • 1/2 cup brown sugar
  • 1/2 cup honey
  • 1/4 cup gluten-free all-purpose flour
  • 3/4 cup rice flour
  • 3 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup sour cream
  • 2 None eggs

    Preheat oven to 300°F. Lightly grease and line an 8x4 inch loaf pan with parchment paper.

    In a medium saucepan, combine butter, sugar and honey. Gently heat, stirring, until dissolved. Let cool.

    Sift flour, spices, baking powder and baking soda together into a large bowl. Whisk sour cream and eggs into butter mixture then fold into dry ingredients until well combined. Transfer to prepared pan and bake for 1 hour 10 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool completely.
