Gingerbread Muffins

  • 2 c. flour
  • 1 1/2 tsp. soda
  • 1 1/2 tsp. powdered ginger
  • 1/2 tsp. salt
  • 1 c. molasses
  • 1/3 c. butter
  • 1/2 c. buttermilk
  • 1 egg
  • 1/2 c. raisins
  • 1/2 c. chopped pecans

Directions

    Sift flour, soda, ginger and salt; set aside.

    Heat the molasses and butter until lukewarm.

    Pour in buttermilk and slightly beaten egg.

    Beat thoroughly.

    Add the raisins and nuts to flour mixture and stir in molasses only until blended.

    Drop into buttered muffin pans, 3/4 full.

    Sprinkle top with cinnamon and sugar (1/2 teaspoon cinnamon and 1/2 cup sugar).

    Bake at 325° for about 25 minutes.
