- Vegetable cooking spray
- 1 cup applesauce
- 1/2 cup light buttermilk
- 1 cup dark molasses
- 1/2 cup packed dark brown sugar
- 2 large eggs, beaten
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 tablespoon ground ginger
- 2 teaspoons ground cinnamon
- 1/2 teaspoon fine salt
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- 1/2 cup water
- 3 tablespoons unsalted butter

- 1 1/2 cups plain low-fat yogurt
- 1/4 cup confectioners' sugar
Directions

1Preheat the oven to 325 degrees F. Lightly spray a 9 by 13 by 2-inch cake pan with cooking spray.

2Line the pan with parchment or waxed paper.

3Whisk together the applesauce, buttermilk, molasses, and sugar in a medium bowl.

4Add the eggs and whisk until smooth.

5Whisk the flour, baking soda, baking powder, ginger, cinnamon, salt, cloves, and allspice together in a large bowl.

6Add the molasses mixture into the flour mixture and whisk until combined.

7Bring the water and butter to a boil in a small saucepan.

8Add the hot liquid to the batter, and whisk until just combined.

9Pour the batter into the prepared pan.

10Bake the cake in the center of the oven, until a toothpick inserted into the center comes out clean, about 40 minutes.

11Cool the cake in the pan on a rack.

12Cut into 12 squares and serve with the yogurt sauce.

13Line a strainer with cheesecloth or a coffee filter and set over a small bowl.

14Stir the yogurt, and put it in the strainer.

15Set aside at room temperature to drain and thicken, about 30 minutes.

16Discard the excess liquid.

17In a small bowl, combine the thickened yogurt with the sugar.
