- 1 lb. carrots
- 3 tsp. dark brown sugar
- 1 tsp. pepper
- 3 tsp. unsalted butter
- 2 tsp. salt
- salt and pepper to taste
Directions

1Peel carrots and cut into julienne strips.

2Fill a saucepan with water.

3Add carrots, bring to a boil and cook 5 to 6 minutes, until tender.

4Drain and dry completely on paper towels. In a separate saucepan melt butter. Add sugar and ginger.

5Add carrots, salt and pepper.

6Cook, stirring, over low heat for 3 to 4 minutes.

7Serve immediately.
