Gingered Chicken Salad

Ingredients

  • 4 lb. boneless, skinless chicken beast, Boiled and cubed
  • 2 or 3 Granny Smith apples; into small bite sized cubes (I leave the skin on)
  • 1 bunch chopped green onion
  • 1/2 cup chopped walnuts
  • 3/4 cup raisins
  • 1-2 tsp. minced garlic
  • 1 1/2 tsp. fresh finely grated ginger
  • 4 oz. cream cheese
  • 1/4-1/2 cup sour cream
  • 1/2 cup mayonnaise

Directions

    Combine all ingredients in a large bowl.

    Stir in mayonnaise mixture.

    Salt and pepper to taste.

    Chill and serve with a loaf of sliced sourdough bread.
