- 6 medium beets, peeled and sliced into 1/4-inch-thick slices (about 2 pounds)
- 2 teaspoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 teaspoons grated fresh ginger
- 1/4 cup orange marmalade
- 1 tablespoon orange juice
Directions

1Combine first 4 ingredients in a large bowl; toss gently. Set aside.

2Combine ginger, marmalade, and orange juice in a small bowl, stirring well. Set aside.

3Place beets in a single layer in a shallow roasting pan or jellyroll pan. Bake at 450° for 12 minutes.

4Remove beets from oven, and brush with ginger-orange mixture. Return to oven, and bake 10 to 12 additional minutes or until tender.
