  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 None eggs
  • 1/2 cup all-purpose flour
  • 3/4 cup self-rising flour
  • 1/3 cup ground almonds
  • 1/2 cup 2% milk
  • 1 None green apple, cored, grated
  • 5.25 oz glace pineapple, finely chopped
  • 5.25 oz glace apricots, finely chopped
  • 12 None fresh cherries, stems intact
  • 3 oz white chocolate, melted, cooled slightly
  • None None powdered sugar, to serve
  • None None vanilla ice cream, to serve

Directions

    Preheat oven to 350°F. Grease and line 6 - 8.5 oz ramekins with parchment paper.

    Cream butter and sugar. Add eggs, 1 at a time, beating well after each addition. Add flour, almond, milk, apple, pineapple and apricot and mix until just combined. Distribute between ramekins, smooth surface and bake for 30-35 mins, until a skewer inserted in the center comes out clean. Let cool for 10 mins.

    Meanwhile, dip each cherry into chocolate and place on a plate lined with parchment paper. Chill for 15 mins to set.

    Trim tops from pudding. Run a knife around rim of ramekins then turn cakes out onto serving plates. Dust with powdered sugar. Top with cherries and serve with ice cream.
