Ingredients: 1/2 cup butter softened; 1 cup granulated sugar; 2 eggs; 1/2 cup all purpose flour; 3/4 cup self rising flour; 1/3 cup ground almonds; 1/2 cup 2% milk; 1 green apple cored, grated; 5 1/4 ounces pineapple glace, finely chopped; 5 1/4 ounces apricots glace, finely chopped; 12 cherries fresh, stems intact; 3 ounces white chocolate melted, cooled slightly; powdered sugar to serve; vanilla ice cream to serve

1 cup granulated sugar

1/2 cup all purpose flour
3/4 cup self rising flour
1/3 cup ground almonds
1/2 cup 2% milk
1 green apple cored, grated

5 1/4 ounces apricots glace, finely chopped
12 cherries fresh, stems intact

Preheat oven to 350°F. Grease and line 6 - 8.5 oz ramekins with parchment paper.

Cream butter and sugar. Add eggs, 1 at a time, beating well after each addition. Add flour, almond, milk, apple, pineapple and apricot and mix until just combined. Distribute between ramekins, smooth surface and bake for 30-35 mins, until a skewer inserted in the center comes out clean. Let cool for 10 mins.

Meanwhile, dip each cherry into chocolate and place on a plate lined with parchment paper. Chill for 15 mins to set.

Trim tops from pudding. Run a knife around rim of ramekins then turn cakes out onto serving plates. Dust with powdered sugar. Top with cherries and serve with ice cream.
