- 5 c. sliced carrots
- 1/3 c. water
- 1 Tbsp. cornstarch
- 1/4 c. unsweetened orange juice
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. plus 1 tsp. margarine
- 2 tsp. chopped fresh parsley
Directions

1Combine carrots and water in a large saucepan; cover and cook over medium heat for 20 minutes or until crisp-tender.

2Drain, reserving liquid.

3Add enough water to liquid to measure 3 tablespoons.

4Set carrots aside.

5Combine carrot liquid, cornstarch, orange juice, salt, pepper and margarine in large saucepan.

6Bring to a boil over medium heat, stirring constantly. Cook 1 minute or until thickened.

7Add carrots; cook 1 minute, stirring well.

8Spoon onto serving plates.

9Sprinkle with parsley. Yield: 8 servings.
