- 1 lb. fresh carrots, sliced or julienne cut
- 1 c. orange juice
- 2 tsp. lemon juice
- 1/8 tsp. grated lemon peel
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1Combine ingredients in a saucepan; cover and simmer 15 minutes, stirring occasionally.

2Uncover and continue to simmer, stirring frequently, until most of the liquid is evaporated and carrots are tender and glazed.

3If a thicker glaze is desired, add 2 teaspoons of cornstarch to 1/4 cup of water.

4Stir until combined and add to carrots; continue cooking until sauce is desired thickness.
