- 2 lb. carrots
- 1/2 c. butter, softened
- 1/3 c. honey
- 2 tsp. coarsely grated orange rind
- 1/4 tsp. nutmeg
- 1/2 tsp. vanilla
Directions

1Peel carrots and cut into serving size pieces.

2Cook carrots in boiling, salted water until just tender.

3Drain.

4While carrots are cooking, whip butter and honey together until light and fluffy.

5Add orange rind, nutmeg and vanilla. Spoon glaze over carrots and toss well.
