- 1 1/4 lb. carrots in 2-inch julienne
- 1 Tbsp. honey
- 1 Tbsp. lemon juice
- 1 Tbsp. vegetable oil
- 1 Tbsp. unsalted butter
- 1 1/2 tsp. brown sugar
- 2 Tbsp. finely chopped fresh parsley
Directions

1Steam carrots until barely tender, about 10 minutes.

2Remove from heat and set aside.

3Mix honey and lemon juice together.

4Heat vegetable oil and butter together in a large skillet over medium heat.

5Saute carrots 3 minutes, stirring constantly.

6Add brown sugar and cook 3 more minutes.

7Add honey and lemon juice and cook 3 minutes more, until carrots are glazed.

8Sprinkle with parsley just before serving.

9Makes 6 servings.
