Glazed Carrots

  • 1 lb. carrots, scrubbed, peeled and cut in strips or slices
  • salt and pepper
  • 1/2 c. orange marmalade
  • 1/4 c. butter
  • 1 Tbsp. mint jelly (optional)

    In a saucepan, cover carrots with water.

    Add salt and pepper to taste.

    Cook until barely tender; drain.

    Melt butter with marmalade and jelly, stirring until all are blended.

    Add carrots; cook together for a few minutes.
