- 1 lb. or 6 to 8 medium carrots
- 1/4 c. packed brown sugar
- 1 1/2 tsp. cornstarch
- 2 Tbsp. butter or margarine
- 2 Tbsp. cold water
- 1/4 c. pecans, coarsely chopped (optional)
Directions

1Wash and cut carrots in 1/2-inch diagonal slices.

2Place in 1-quart casserole with butter and brown sugar.

3Cover.

4Microwave on High for 10 minutes, stirring after 5 minutes.

5Mix cornstarch and water together until smooth.

6Stir into carrot mixture.

7Add pecans and cover.

8Microwave on High approximately 3 minutes or until thickened.

9Stir before serving.
