- 7 lb. cucumbers, sliced thin
- 2 gal. water
- 2 c. lime
- ice
- 7 c. sugar
- 2 Tbsp. salt
- 6 c. vinegar
- 1/4 pkg. pickling spices
- ginger to taste
Directions

1Soak cucumbers in water and lime overnight.

2Rinse well.

3Then soak in cold water for 2 hours, then rinse and put in ice for 1 hour.

4Make your syrup with sugar, salt, vinegar, pickling spice and add ginger right before the cucumbers.

5When syrup is boiling, add cucumbers and boil for 20 minutes, then simmer for 1 hour. Put in sterilized jars and seal.
