Glazed Pineapple

  • 1 whole Pineapple
  • 3 Tablespoons Butter
  • 1 Tablespoon Honey
  • Cayenne Pepper, To Taste (optional)

    1) Trim top and bottom from pineapple and set upright. cut down the sides to remove brown skin.

    2) Turn pineapple on side and slice about 1/4 inch thick, removing core if it is too tough to eat (most of the time it is.)

    3) In a small pan melt your butter and add in honey. You want this to all melt together and form a glaze, but there is no need to cook it at a high temperature or for very long, just need the two to get good and friendly with each other.

    4) Place pineapple slices onto a hot grill (med-hi heat), then rotate 90 degrees if you like the pretty grill pattern. Drizzle some glaze onto each slice and let them cook for 2 or 3 minutes. You want those pretty grill marks and a bit of char (a little bit) around the edges is fine.

    5) Turn slices over, rotate if you like, and drizzle again with remaining glaze and let cook for a couple more minutes.

    6) Serve immediately or put on an upper rack of the grill to keep warm while the rest of dinner finishes. Serve as is for a side dish or with some sweetened whipped cream for a light dessert.

    For a bit of kick to your pineapple, add a bit a good cayenne pepper to your glaze and enjoy the more complex flavors.
