- 4 whole black peppercorns
- 2 whole cloves
- 1 bay leaf
- 1/3 c. apricot preserves
- 4 large carrots, sliced and cut diagonally 1/8-inch thick
- 1/2 tsp. sugar
- 6 Tbsp. sugar
- 2 pkg. (10 oz.) frozen spinach
Directions

1Place pork in a large pot or Dutch oven; cover with water. Add pepper, cloves and bay leaf.

2Bring to a boil; reduce heat and simmer 2 1/4 hours (about 45 minutes per pound) or until pork is tender.

3Remove from heat; let meat cool in water about 2 hours.
