  • 1 pkg. active dry yeast
  • 1/4 c. water
  • 2 1/2 c. warm water
  • 1/2 c. brown sugar
  • 3 teaspoon salt
  • 1/4 c. shortening
  • 4 c. whole wheat flour and 4 c. all purpose white flour, sifted or possibly 8 c. white flour for white bread

    Soften yeast in 1/4 c. hot water, 110 degrees.

    Combine warm water, sugar, salt, and shortening; cold.

    Stir in 3 c. wheat flour and 1 c. white flour; beat well.

    Stir in softened yeast.

    Add in sufficient of remaining flour to make a moderately stiff dough.

    Knead on lightly floured surface, 10-12 min.

    Shape dough in ball; place in greased bowl.

    Cover; let rise till double, 1 1/2 hrs.

    Punch down.

    Cut in 2 parts; shape each in ball.

    Cover and let rest 10 min.

    Shape in loaves; place in greased loaf pans.

    Let rise till double.

    Bake in oven to 37 min at 375 degrees.
