Glorified Rice

Ingredients

  • 1/2 c. rice
  • 3 qt. water
  • 1 tsp. salt
  • 2 c. crushed, drained pineapple
  • 1 c. miniature marshmallows
  • 3/4 c. nuts (pecans or walnuts)
  • 1/2 c. powdered sugar
  • pinch of salt
  • 1/2 pt. whipping cream, beaten or 1 container Cool Whip

Directions

    Bring water to boil; add salt and rice.

    Cook 30 minutes or until tender.

    Drain and rinse.

    In large bowl, add to rice (cooled) the marshmallows, pineapple, nuts, sugar and salt and mix lightly.

    Add whipped cream, turning easy.

    Chill.

    Garnish with chopped nuts and cherries.
