  • 1/2 cup margarine
  • 1 cup fruit, blended (such as strawberries or any mixture of fruit)
  • 2 cups rice flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 tablespoons baking powder
  • 1 dash xanthan gum
  • 1/8 cup nuts (or roasted edamame, sunflower seeds, etc)

Directions

    Cream butter with sugar in large bowl. Beat in eggs, and fruit. Mix in flour & baking powder. Turn into 2 mini loaf pans, sprayed. Bake at 325 for one hour and 40 minutes until brown on top.
