- 1/2 cup margarine
- 1 cup fruit, blended (such as strawberries or any mixture of fruit)
- 2 cups rice flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 tablespoons baking powder
- 1 dash xanthan gum
- 1/8 cup nuts (or roasted edamame, sunflower seeds, etc)
Directions

1Cream butter with sugar in large bowl. Beat in eggs, and fruit. Mix in flour & baking powder. Turn into 2 mini loaf pans, sprayed. Bake at 325 for one hour and 40 minutes until brown on top.
