Gluten-Free Fruit Pudding

- 2 cups golden raisins
- 1 1/2 cups chopped raisins
- 1/2 cup dried currants
- 1 1/2 cups chopped pitted dates
- 1/2 cup orange juice
- 2 tbsp honey
- 1 cup firmly packed brown sugar
- 12 tbsp (1 1/2 sticks) dairy-free margarine
- 1 cup soy flour
- 1 cup rice flour
- 1 tsp cream of tartar
- 1/2 tsp baking soda
- 2 tsp mixed spice, such as pumpkin pie spice
- 1 cup ground almonds
Directions

1Combine the fruit, 1 1/2 cups water, orange juice, honey, sugar and margarine in a large saucepan. Stir on medium heat, without boiling, until the margarine melts. Transfer the mixture to a large heatproof bowl; cool.

2Grease a 9-cup pudding bowl, suitable for steaming; line the bottom with parchment paper.

3Stir the sifted dry ingredients and almonds into the fruit mixture.

4Spoon the mixture into the pudding bowl. Cover with greased foil, then secure with a lid or kitchen string. Place the steamer in a large saucepan with enough boiling water to come halfway up the side of the steamer. Simmer, covered, for about 6 hours, replenishing the water as necessary to maintain the water level.

5Let the pudding stand in the bowl for 5 mins, then turn out onto a plate to serve.
