  • 2 lb. potatoes, washed
  • 1 egg yolk
  • 3 c. flour (regular)
  • 3 Tbsp. semolina flour
  • 1/2 tsp. salt

Directions

    Boil potatoes (skins on) until fork-tender.

    Drain; cool to touch.

    Peel and run through ricer into mixer bowl.

    Beat in egg yolk.

    Add flour, semolina and salt.

    Mix until soft dough.
