  • 1/4 cup canola oil
  • 2 each yellow onions, minced King Sooper's 1 lb For $0.99 thru 02/09
  • 16 cloves garlic, minced
  • 1 qt. long-grain white rice, uncooked
  • 2-1/4 qt. vegetable stock
  • 1/2 cup tomato paste
  • 2 Tbsp. canned chipotle peppers in adobo sauce, finely chopped
  • 1/2 cup KRAFT Lime Cilantro Vinaigrette

Directions

    Heat oil in large pot on medium heat.

    Add onions and garlic; saute until lightly caramelized.

    Add rice; stir to evenly coat.

    Cook 3 min.

    or until lightly toasted, stirring frequently.

    Add stock, tomato paste and peppers; mix well.

    Bring to boil.

    Reduce heat; cover.

    Simmer 20 min.

    or until liquid is cooked off and rice is tender.

    Remove from heat.

    Stir in vinaigrette.
