- 1/4 cup canola oil
- 2 each yellow onions, minced King Sooper's 1 lb For $0.99 thru 02/09
- 16 cloves garlic, minced
- 1 qt. long-grain white rice, uncooked
- 2-1/4 qt. vegetable stock
- 1/2 cup tomato paste
- 2 Tbsp. canned chipotle peppers in adobo sauce, finely chopped
- 1/2 cup KRAFT Lime Cilantro Vinaigrette
Directions

1Heat oil in large pot on medium heat.

2Add onions and garlic; saute until lightly caramelized.

3Add rice; stir to evenly coat.

4Cook 3 min.

5or until lightly toasted, stirring frequently.

6Add stock, tomato paste and peppers; mix well.

7Bring to boil.

8Reduce heat; cover.

9Simmer 20 min.

10or until liquid is cooked off and rice is tender.

11Remove from heat.

12Stir in vinaigrette.

13Fluff occasionally with fork until ready to serve.
