  • 1 head cauliflower
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons light sour cream
  • salt

Directions

    Cut cauliflower into chunks and steam or boil until until it is very, very soft.

    Drain water.

    Use a potato masher to mash the cauliflower until it is fairly smooth (You can use a blender or food processor to get a very smooth result, but I like to keep a little texture).

    Add cheese, sour cream, and salt to taste.
