Golabki (Cabbage Rolls)

Ingredients
- 1 head cabbage
- 1 lb. ground beef
- 1/2 lb. pork
- 1 (16 oz.) can tomato sauce
- 1 (8 oz.) can tomatoes
- 2 c. cooked rice
- 2 eggs
- 1 onion, finely chopped
- 1 Tbsp. margarine
- salt and pepper to taste
Directions

1Remove core from cabbage.

2Scald cabbage in boiling water and remove leaves as they soften.

3Saute onions in margarine very lightly; do not brown.

4Combine with the meat, rice, eggs and seasonings.

5Mix well.

6Place 2 tablespoons of mixture in center of cabbage leaf and roll.

7Wrap and push sides of roll in with finger to hold together.

8Pour tomato sauce on rolls, then squeeze tomatoes from can and arrange on top of rolls.

9Simmer over low heat for 2 hours in a heavy soup pot.
