  • 1 c. plain flour
  • 1/2 tsp. salt
  • 1 Tbsp. vegetable oil
  • 2/3 c. cold water
  • 1 egg white
  • 1 to 1 1/2 lb. fish fillets

Directions

    Combine flour, salt, oil and water; blend well.

    Beat egg white until soft peak forms.

    Fold into flour mixture.

    Dip both sides of fish in batter.

    Fry fish in 1/2 inch of oil heated to 370° until golden brown.

    Drain on paper towel.
