Golden Potatoes

  • 4 baking potatoes
  • milk
  • 1 c. shredded Cheddar cheese
  • 1/2 tsp. salt
  • 2 Tbsp. minced onion
  • 1/4 c. butter

Directions

    Bake potatoes at 400° for 1 hour or until well done.

    Cut potatoes lengthwise and scoop out.

    Combine with butter, salt and enough milk to whip into a fluff.

    Spoon the mixture into the potato shell.

    Sprinkle with Cheddar cheese.

    Heat at 450° until slightly brown and cheese melts.

    May be prepared ahead and frozen until needed.
