- 8 medium potatoes
- 1/2 stick butter
- 2 c. shredded Cheddar cheese
- 2 c. sour cream
- 1/3 c. green onions, chopped
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
Directions

1Boil the potatoes in skins until almost done; chill slightly, then remove skins and grate potatoes into a large bowl.

2In medium saucepan, combine 1/2 stick butter and cheese until almost melted. Remove from heat and stir in sour cream, onions, salt and pepper. Pour over potatoes.

3Stir lightly and turn into a buttered 2-quart casserole.

4Dot with butter and sprinkle with paprika. Bake 30 to 40 minutes at 350°.

5Can be made the day before and then baked.
