Golden Smashed Potatoes

  • 2 12 lbs yukon gold potatoes, quartered
  • 1 tablespoon olive oil
  • 1 teaspoon mustard seeds
  • 1 cup skim milk
  • 2 tablespoons maple syrup
  • 12 teaspoon ground turmeric
  • 1 teaspoon salt
  • 12 teaspoon pepper

    Place potatoes in a large saucepan; cover with water.

    Bring to a boil; reduce heat and simmer 15 min or til tender.

    Drain; return potatoes to pan.

    While potatoes cook, heat oil in a small saucepan over medium heat.

    Add mustard seeds; cook 2 min or til seeds begin to pop.

    Add milk, syrup, and turmeric; simmer til reduced to 1/2 c (about 10 min).

    Add milk mixture, salt and pepper and mash to desired consistency.
