- 2 12 lbs yukon gold potatoes, quartered
- 1 tablespoon olive oil
- 1 teaspoon mustard seeds
- 1 cup skim milk
- 2 tablespoons maple syrup
- 12 teaspoon ground turmeric
- 1 teaspoon salt
- 12 teaspoon pepper
Directions

1Place potatoes in a large saucepan; cover with water.

2Bring to a boil; reduce heat and simmer 15 min or til tender.

3Drain; return potatoes to pan.

4While potatoes cook, heat oil in a small saucepan over medium heat.

5Add mustard seeds; cook 2 min or til seeds begin to pop.

6Add milk, syrup, and turmeric; simmer til reduced to 1/2 c (about 10 min).

7Add milk mixture, salt and pepper and mash to desired consistency.
